Theo’s Piri Piri Chicken Posh Dog, Homemade Pumpkin Ketchup, Gherkin, Crispy Fried Onions, Hot Dog Buns

INGREDIENTS: 6 Theo’s Piri Piri Chicken Posh Dogs, 3 Gherkins, Sliced, 1/2 Small Pumpkin, Cubed, 2 tbsp Tomato Puree, 1 tsp Paprika Powder, 2 tbsp White Wine Vinegar, 6 tbsp of Water Squeeze of Fresh Lemon Juice, 1 tsp Sugar Pinch of Salt, Handful of Crispy Fried Onions, 6 Hot Dog Buns

METHOND: To make pumpkin ketchup: Drizzle pumpkin with olive oil and bake in the oven for 20 minutes or until softened. In a food processor, blend roasted pumpkin, tomato puree, paprika powder, vinegar, water, lemon juice, sugar and pinch of salt. Set aside. Cook chicken sausages for 20 minutes in the oven at 180 degrees. Lightly toast hot dog buns. Place gherkin and sausage in the hot dog bun. Finish with pumpkin ketchup and crispy fried onion.

Theo’s Piri Piri Chicken Thigh Sliced, Homemade Pumpkin Hummus, Bloody Slaw, Tortilla Wrap

INGREDIENTS: 6 Theo’s Piri Piri Chicken Thighs, Sliced, 1/2 Small Pumpkin, Cubed, 4 tbsp Theo’s Hummus, 1/2 Small Red Cabbage, Shredded, 1 tbsp of Olive Oil, Squeeze of Fresh Lemon Juice, Handful of Fresh Mint, Roughly Sliced, Pinch of Salt, Handful of Pumpkin Seeds, Lightly Toasted 6 Theo’s Tortilla Wraps

METHOD: To make pumpkin hummus: Drizzle pumpkin with olive oil and bake in the oven for 20 minutes or until softened. In a food processor, blend roasted pumpkin and hummus. Set aside. To Make Bloody Slaw: In a bowl, toss red cabbage, mint, lime juice, olive oil and salt. Set aside. Cook chicken for 30 minutes in the oven at 180 degrees. Lightly toast tortilla wraps. Slather each wrap with pumpkin hummus. Add slaw and top up with chicken.
