Theo's Mediterranean Whole Chicken Thighs, Cucumber, Gem Lettuce, Tomato and Cucumber, Dill & Feta Salad, Brioche Bun
INGREDIENTS: 6 Theo’s Mediterranean Whole Chicken Thighs, 1 Gem Lettuce, 1 Cucumber, Ribbons, 2 Tomatoes, Sliced, Squeeze Of Fresh Lemon Juice, 1/2 Bunch Of Fresh Dill, Roughly Chopped, Handful Of Crumbled Feta Cheese, Dress With Theo’s Minted Yoghurt Sauce, Pinch Of Salt, 6 Brioche Buns
METHOD: To make salad: . In a small bowl place cucumber ribbons, add pinch of salt and set a side. Cook chicken for 30 minutes in the oven at 180 degrees. Lightly toast brioche buns. Remove excess water from the cucumber, add lemon juice, roughly chopped dill and crumbled feta. Slather each bun with Theo’s minted yoghurt sauce. Add lettuce, tomato and chicken. Top up with cucumber salad.
Theo's Mediterranean Sliced Chicken Thighs, Romaine Lettuce, Avocado, Parmesan Cheese, Psomaki Croutones
INGREDIENTS: 1/2 Pack Of Theo's Mediterrnean Sliced Chicken Thighs, 1 Large Avocados, Flesh Scooped Out and Sliced, 2 Romaine Lettuce, Roughly Chopped, Handful Of Shaved Parmesan Cheese, Squeeze Of Fresh Lime Juice, Dress With Theo’s Garlic Mayo Sauce, Salt & Pepper, Seasoning, 2 Theo's Psomaki Flatbread, Roughly Sliced
METHOD: To make croutones: In a baking try toss psomaki flatbread with olive oil and bake for 5 minutes until golden. Set aside. Cook chicken for 30 minutes in the oven at 180 degrees. To make a salad: In a large bowl toss romaine lettuce, avocado, chicken and croutones. Add shaved parmesan cheese and Theo’s sauce

INGREDIENTS: 1/2 Pack Of Theo's Mediterranean Sliced Chicken Thighs, 2 Roasted Red Peppers (Jar), Handful Of Black Olives, Sliced, 1/2 Bunch Of Fresh Parsley, Roughly Chopped, Squeeze Of Fresh Lemon Juice, Dress With Theo's Minted Yoghurt Sauce, 6 Theo's Psomaki Flatbreads
METHOD: To make a salad: In a large bowl toss roasted red peppers, olives and parsley. Add lemon juice and set aside. Cook chicken for 30 minutes in the oven at 180 degrees. . Lightly toast flatbreads. Slather each Psomaki with Theo’s minted yoghurt sauce. Add chicken, salad and sprinkle with feta.
