CHINESE NEW YEAR & VALENTINE'S DAY MENU
BBQ KINDA BAO
Theo’s BBQ pulled chicken thigh, Chinese slaw, chilli & garlic mayo, steamed folded naan
INGREDIENTS: 6 Theo’s BBQ Whole Chicken Thighs, Pulled, 6 tbsp Theo’s Mayo & Garlic Sauce, 2 tbsp Theo’s Chilli Sauce, 3 Spring Onions, Julienne, 1/2 Small Chinese Cabbage, Shredded, 1 Large Carrot, Julienne, Leaves Of Fresh Coriander ,3 tbsp Soy Sauce, 1 tbsp Sesame Oil, 1 tbsp Rice Vinegar, 1 tbsp Theo’s Sweet Chilli Sauce, 2 tbsp Sesame Seeds, Lightly Toasted, 6 Folded Naans, Steamed
METHOD: To make mayo: In a small bowl mix Theo’s garlic mayo sauce and Theo’s chilli sauce. Set aside. To make slaw: In a large bowl toss shredded cabbage and carrots. In a small jar mix soy sauce, sesame oil, rice vinegar and sweet chilli. Shake well and dress the slaw. Set aside. Cook Theo’s chicken for 30 minutes in the oven at 160°C. Once chicken is cooked, shred using 2 forks and mix with spring onions. Steam naans. Slather each naan with mayo. Add slaw and chicken. Top up with coriander and sesame seeds.
BBQ STIR FRY
Theo’s BBQ diced chicken thighs & broccoli florets stir fry with steamed rice
INGREDIENTS: Half of 1kg Bag Of Theo’s BBQ Diced Chicken Thighs, 1 Large Broccoli, Florets, 1 Large Onion, Sliced, 2 Spring Onions, Julienne, 2 tbsp sesame seeds, lightly toasted, 2 tsp Minced Garlic, 2 tsp Minced Ginger, 3 tbsp Oyster Sauce, 1 tbsp Sesame Oil, 1 tbsp Cooking Oil, 1 tbsp Soy Sauce, 1 tsp Cornflour Half Cup Of Water, 1,1/2 Cup Of Rice, Salt & Pepper To Taste
METHOD: To make sauce: In a bowl mix oyster sauce, sesame oil, soy sauce, cornstarch. Set aside. Steam rice according to the packet instruction. Cook chicken in the oven at 180°C for 20 minutes. In a large pan/wok heat the cooking oil, add garlic, ginger, onions and fry until golden. Add broccoli and cook until tender. Add water and sauce. Cook until sauce has just started to thicken. Add chicken and mix altogether. Serve with rice and lightly toasted sesame seeds and spring onions.
HIS & HERS BURGER
Theo’s Sweet Mediterranean whole chicken thigh, Greek mustard sauce, salsa verde, rocket, brioche bun
INGREDIENTS: 6 Theo’s Sweet Mediterranean Whole Chicken Thighs, 6 tbsp Greek Yoghurt, 2 tsp Honey, 1 tbsp Dijon Mustard, 2 tbsp Yellow Mustard, 2 tbsp White Vinegar, 2 tbsp Olive Oil, Pinch Of Salt, Half A Bag Of Rocket, Handful Of Cornichons Handful Of Capers, 1/2 Bunch Of Mint, Finely Chopped, 1/2 Bunch Of Parsley, Finely Chopped, 6 Brioche Buns
METHOD: To make salsa verde: In a small bowl mix cornichons, capers, mint, parsley, olive oil. Set aside. To make mustard sauce: Blend Greek yoghurt, honey, dijon mustard, yellow mustard, remaining vinegar and salt. Set aside. Cook Theo’s chicken for 20 minutes in the oven at 180°C. Lightly toast brioche buns. Slather each bun with mustard sauce. Add rocket and chicken. Top up with salsa verde.
